Seasonal blueberry cake – sugar free from Slovakia
Everyone loves sweets and candies, cheescakes and cookies. It is perfect to enjoy it during Christmas holidays but what about summer? You need energy to go hike but not without some healthy sweets!
If you liked our first recipe (that can be used as lunch), here is a recipe how to make yummie brunch with blueberries that are picked this season! This cake is a bit healthier, because it is sugar free!
You will need
- 200g flour (you can use wholemeal flour)
- 5tbs honey (you can use sugar)
- 80g melted butter
- 2 eggs
- 200ml milk
- 50g almonds
- 1/2 of pack of baking powder /6 grams/
- Blueberries (you can use freezed fruit)
Your first step is to put melted butter into a bowl and mix it with honey. Stir it until the ingredients get together perfectly. Then add yolks and milk to the mixture. Beat egg whites.
Put the mixture to the blender and blend slowly. Crush almonds and put them to the blender with baking powder and flour. After that add beated egg whites and carefully stir.
Pour the mixture to the baking sheet and let set few seconds. Use smaller baking sheet to have fluffier cake!
Add fruit (blueberries in this case) and bake on 180°C in the oven 15-20min. After baking let cool down.
